- 1 tbsp cumin
- 1 tbsp smoked paprika
Instructions
- Sauté the Aromatics: Turn on your Instant Pot and select the sauté function. Add olive oil and chopped onions. Sauté until translucent (about 3 minutes). Stir in minced garlic for another minute.
- Add Your Veggies: Add cubed sweet potatoes to the pot. Stir to combine with the onion-garlic mixture. Cook together for about 5 minutes.
- Spice It Up: Sprinkle in cumin and smoked paprika. Stir well to coat the sweet potatoes and let the spices bloom for about 2 minutes.
- Combine Everything: Add black beans, diced tomatoes (with juices), and chipotle peppers to the pot. Mix thoroughly until combined.
- Pressure Cook: Seal the lid of your Instant Pot, ensuring it’s set to “sealing.” Set on high pressure for 10 minutes.
