Description

A hearty, comforting chili featuring smoky chipotle and sweet potatoes, perfect for chilly nights or cozy gatherings.

Ingredients

Scale
  • 1 lb sweet potatoes, peeled and cubed
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tsp olive oil
  • 1 tbsp cumin
  • 1 tbsp smoked paprika

Instructions

  1. Sauté the Aromatics: Turn on your Instant Pot and select the sauté function. Add olive oil and chopped onions. Sauté until translucent (about 3 minutes). Stir in minced garlic for another minute.
  2. Add Your Veggies: Add cubed sweet potatoes to the pot. Stir to combine with the onion-garlic mixture. Cook together for about 5 minutes.
  3. Spice It Up: Sprinkle in cumin and smoked paprika. Stir well to coat the sweet potatoes and let the spices bloom for about 2 minutes.
  4. Combine Everything: Add black beans, diced tomatoes (with juices), and chipotle peppers to the pot. Mix thoroughly until combined.
  5. Pressure Cook: Seal the lid of your Instant Pot, ensuring it’s set to “sealing.” Set on high pressure for 10 minutes.
  6. Serve It Up: Once cooking is complete, perform a quick release of steam. Stir the chili before serving hot; top with avocado or cilantro if desired.
