- 8 small corn tortillas

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss chopped cauliflower florets with olive oil, chipotle powder, salt, pepper, and lime juice until well-coated.
- Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper. Roast for about 20 minutes or until golden brown and slightly crispy.
