  • 200g fresh ramen noodles
  • 1 block (300g) firm tofu
  • 4 cups low-sodium vegetable broth
  • 2 tbsp miso paste (white or red)
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • 1 tbsp toasted sesame seeds

Instructions

  1. Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing something heavy on top for about 15 minutes. Cut into cubes afterward.
  2. Heat a non-stick skillet over medium-high heat and add 1 tbsp of oil. Once hot, place the tofu cubes in the skillet and fry until golden brown on all sides, approximately 8-10 minutes.
  3. In another pot, bring water to a boil and cook the ramen noodles according to package instructions (around three minutes for fresh noodles).
  4. In a large saucepan, combine vegetable broth, miso paste, soy sauce, and any desired spices (such as chili flakes). Simmer over medium heat for about five minutes until well mixed.
  5. Drain the cooked noodles and add them directly into the broth. Stir gently to ensure they soak up all the flavors.
  6. Ladle your spicy miso ramen into bowls and top with crispy tofu, chopped green onions, and toasted sesame seeds. Enjoy immediately while hot!
