  • 9 oz cheese tortellini (fresh or frozen)
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until the onions are translucent, about 5 minutes.
  2. Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, approximately 6 to 8 minutes.
  3. Stir in the diced tomatoes (with juice) and chicken broth. Bring to a gentle simmer.
  4. After about 10 minutes of simmering, add the cheese tortellini and cook according to package instructions, usually around 3 to 5 minutes.
