- 1 lb Italian sausage (spicy or mild)
- 9 oz cheese tortellini (fresh or frozen)
- 4 cups low-sodium chicken broth
- 2 cups fresh spinach
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until the onions are translucent, about 5 minutes.
- Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, approximately 6 to 8 minutes.
- Stir in the diced tomatoes (with juice) and chicken broth. Bring to a gentle simmer.
- After about 10 minutes of simmering, add the cheese tortellini and cook according to package instructions, usually around 3 to 5 minutes.
- Just before serving, fold in fresh spinach leaves until wilted.
- Ladle into bowls and enjoy alongside crusty bread.
