  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium vegetable broth

Instructions

  1. Sauté the Vegetables: In a large pot over medium heat, add a splash of olive oil. Sauté chopped onions, bell pepper, and minced garlic until soft and fragrant, about 5 minutes.
  2. Brown the Turkey: Add ground turkey to the pot. Cook until browned throughout, breaking it apart as you go, about 7 minutes.
  3. Mix in Spices: Stir in chili powder and cumin, ensuring spices coat the turkey evenly.
  4. Add Pumpkin & Beans: Incorporate pumpkin puree, kidney beans, and black beans. Stir until well mixed.
