- 1 can (15 oz) black beans, drained and rinsed

- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium vegetable broth
Instructions
- Sauté the Vegetables: In a large pot over medium heat, add a splash of olive oil. Sauté chopped onions, bell pepper, and minced garlic until soft and fragrant, about 5 minutes.
- Brown the Turkey: Add ground turkey to the pot. Cook until browned throughout, breaking it apart as you go, about 7 minutes.
- Mix in Spices: Stir in chili powder and cumin, ensuring spices coat the turkey evenly.
- Add Pumpkin & Beans: Incorporate pumpkin puree, kidney beans, and black beans. Stir until well mixed.
- Pour in Tomatoes & Broth: Add diced tomatoes (with juice) and vegetable broth to the pot. Stir again before bringing to a gentle simmer.
- Simmer: Lower the heat slightly and let the chili simmer uncovered for about 20 minutes to meld flavors.
