- 2 cups seafood medley (shrimp, mussels, calamari)
- 2 cups low-sodium chicken broth

Instructions
- Gather all ingredients. Chop garlic finely and rinse seafood if necessary.
- In a large paella pan or skillet over medium heat, add olive oil. Once hot, add minced garlic and cook until fragrant (about 1 minute).
- Add short-grain rice to the pan; stir for about 2 minutes until slightly translucent.
- Pour in chicken broth mixed with saffron threads. Stir well, season with salt, cover, and simmer on low heat for about 15 minutes.
- After 15 minutes, gently nestle your seafood medley into the rice mixture. Cover again and cook until seafood is done (approximately 5 more minutes).
- Remove from heat and let rest for 5 minutes before serving. Garnish with fresh parsley or lemon wedges.
