Description

Warm up with this delightful Winter Seafood Paella, featuring saffron-infused rice and a medley of fresh seafood, perfect for cozy gatherings or festive celebrations.

Ingredients

Scale
  • 1 pinch saffron threads
  • 1 cup short-grain rice (Bomba or Arborio)
  • 2 cups seafood medley (shrimp, mussels, calamari)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)

Instructions

  1. Gather all ingredients. Chop garlic finely and rinse seafood if necessary.
  2. In a large paella pan or skillet over medium heat, add olive oil. Once hot, add minced garlic and cook until fragrant (about 1 minute).
  3. Add short-grain rice to the pan; stir for about 2 minutes until slightly translucent.
  4. Pour in chicken broth mixed with saffron threads. Stir well, season with salt, cover, and simmer on low heat for about 15 minutes.
  5. After 15 minutes, gently nestle your seafood medley into the rice mixture. Cover again and cook until seafood is done (approximately 5 more minutes).
  6. Remove from heat and let rest for 5 minutes before serving. Garnish with fresh parsley or lemon wedges.
