Description

A creamy and comforting casserole featuring tender chicken and vibrant broccoli, perfect for family dinners or gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
  2. Cook Your Chicken: Season chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken until golden brown and cooked through (about 6-7 minutes per side). Remove from heat and let rest.
  3. Prepare Your Broccoli: Steam broccoli florets until just tender, about 3 minutes.
  4. Mix Up the Creamy Sauce: In a bowl, combine mayonnaise, sour cream, chicken broth, lemon juice, and half of the shredded cheddar cheese. Stir until well mixed.
  5. Assemble It All Together: Slice the rested chicken into bite-sized pieces and layer them in the prepared baking dish. Add steamed broccoli on top, pour the creamy sauce over everything, and sprinkle remaining cheese on top.
  6. Bake Until Golden: Bake for about 25-30 minutes or until bubbly and golden brown on top. Serve hot alongside crusty bread or fluffy rice.
