- 4 cups fresh broccoli florets
- 1 cup shredded sharp cheddar cheese
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat Your Oven: Preheat your oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
- Cook Your Chicken: Season chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken until golden brown and cooked through (about 6-7 minutes per side). Remove from heat and let rest.
- Prepare Your Broccoli: Steam broccoli florets until just tender, about 3 minutes.
- Mix Up the Creamy Sauce: In a bowl, combine mayonnaise, sour cream, chicken broth, lemon juice, and half of the shredded cheddar cheese. Stir until well mixed.
- Assemble It All Together: Slice the rested chicken into bite-sized pieces and layer them in the prepared baking dish. Add steamed broccoli on top, pour the creamy sauce over everything, and sprinkle remaining cheese on top.
- Bake Until Golden: Bake for about 25-30 minutes or until bubbly and golden brown on top. Serve hot alongside crusty bread or fluffy rice.
