Description

Indulge in the creamy goodness of Chicken Divan with Broccoli, featuring tender chicken and vibrant broccoli enveloped in a luscious sauce. Perfect for weeknight dinners or festive gatherings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. In a skillet over medium heat, add a splash of oil and cook the chicken for about 5 minutes on each side until golden brown. Remove from heat and let cool before slicing.
  3. In boiling water, blanch the broccoli florets for about 2 minutes until bright green but still crisp. Drain and set aside.
  4. In a mixing bowl, combine mayonnaise, sour cream, chicken broth, garlic powder, and lemon juice. Stir until smooth.
  5. Layer sliced chicken in the prepared baking dish, followed by blanched broccoli. Pour the sauce over everything and sprinkle shredded cheddar cheese on top.
  6. Bake in the preheated oven for about 30 minutes or until bubbling and golden brown on top. Serve warm.
