- 3–4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 2 tbsp garlic paste
- 2 tbsp ginger paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 can (14 oz) crushed tomatoes
- 1 cup full-fat coconut milk
- 1 large onion, finely chopped
- 2 tbsp cooking oil
Instructions
- In a large bowl, combine yogurt, garlic paste, ginger paste, cumin powder, coriander powder, and garam masala.
- Add diced chicken breasts and mix well until fully coated. Cover and marinate in the fridge for at least one hour or overnight for best flavor.
- Heat oil in a large skillet over medium heat. Add finely chopped onions and sauté until golden brown (5-7 minutes).
- Once the onions are ready, add cumin seeds and cook for another minute until fragrant.
- Pour in crushed tomatoes and simmer for about five minutes to develop flavors.
- Add the marinated chicken along with all marinade into the skillet. Pour in coconut milk and simmer on low heat for about 20 minutes until chicken is cooked through; stir occasionally to prevent sticking.
- Transfer to plates and garnish with fresh cilantro. Serve with basmati rice or naan bread for a complete meal.
