  • 34 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 2 tbsp garlic paste
  • 2 tbsp ginger paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 can (14 oz) crushed tomatoes
  • 1 cup full-fat coconut milk
  • 1 large onion, finely chopped
  • 2 tbsp cooking oil

Instructions

  1. In a large bowl, combine yogurt, garlic paste, ginger paste, cumin powder, coriander powder, and garam masala.
  2. Add diced chicken breasts and mix well until fully coated. Cover and marinate in the fridge for at least one hour or overnight for best flavor.
  3. Heat oil in a large skillet over medium heat. Add finely chopped onions and sauté until golden brown (5-7 minutes).
  4. Once the onions are ready, add cumin seeds and cook for another minute until fragrant.
  5. Pour in crushed tomatoes and simmer for about five minutes to develop flavors.
  6. Add the marinated chicken along with all marinade into the skillet. Pour in coconut milk and simmer on low heat for about 20 minutes until chicken is cooked through; stir occasionally to prevent sticking.
  7. Transfer to plates and garnish with fresh cilantro. Serve with basmati rice or naan bread for a complete meal.
