Description

Delight your holiday gatherings with this enchanting Buttercream Santa Cake, a festive treat that combines whimsical design and delicious flavors.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, at room temperature
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup unsalted butter, at room temperature
  • 4 cups powdered sugar
  • 2 tbsp vanilla extract
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with butter or nonstick spray and dust lightly with flour.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. In another large bowl, cream together the unsalted butter and granulated sugar using an electric mixer until light and fluffy (about three minutes).
  4. Add eggs one at a time while mixing well after each addition. Mix in vanilla extract until fully incorporated.
  5. Gradually add the dry mixture to the wet ingredients while alternating with heavy cream. Mix until just combined—avoid overmixing.
  6. Divide the batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean. Allow cakes to cool completely.
  7. In a large mixing bowl, beat softened unsalted butter until creamy.
  8. Gradually add powdered sugar and mix on low speed until combined.
  9. Add vanilla extract and heavy cream, beating on high speed until fluffy and spreadable.
  10. Once cooled, spread frosting between cake layers and cover the entire cake with remaining buttercream.
  11. Get creative with decorations using colored icing or sprinkles to create Santa's face!
