  • 8 oz soft goat cheese
  • 1 cup chopped walnuts (toasted)
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until fork-tender.
  2. Allow roasted beets to cool slightly before peeling off their skins.
  3. Thinly slice each beet into 1/4-inch rounds using a sharp knife or mandoline for even layers.
  4. On a serving platter, layer the beet slices with goat cheese and sprinkle with walnuts. Repeat until several layers are formed.
  5. Sprinkle fresh thyme over each layer and drizzle with balsamic glaze.
