Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until fork-tender.
- Allow roasted beets to cool slightly before peeling off their skins.
- Thinly slice each beet into 1/4-inch rounds using a sharp knife or mandoline for even layers.
- On a serving platter, layer the beet slices with goat cheese and sprinkle with walnuts. Repeat until several layers are formed.
