- 1 tablespoon Fresh Thyme, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the Brussels sprouts. Peel and cube the butternut squash into bite-sized pieces.
- Cut the Cajun sausage into bite-sized pieces.
- In a large mixing bowl, combine the Brussels sprouts, butternut squash, and sliced sausage. Drizzle with olive oil and sprinkle with Cajun seasoning, salt, and pepper. Toss until evenly coated.
- Spread the mixture onto a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until veggies are tender and caramelized.
- Transfer to plates while hot, garnishing with fresh thyme before serving.
