  • 1 pound Cajun Sausage (chicken or turkey)
  • 1 pound Brussels Sprouts, halved
  • 2 cups Butternut Squash, diced
  • 3 tablespoons Olive Oil
  • 2 tablespoons Cajun Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Fresh Thyme, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the Brussels sprouts. Peel and cube the butternut squash into bite-sized pieces.
  3. Cut the Cajun sausage into bite-sized pieces.
  4. In a large mixing bowl, combine the Brussels sprouts, butternut squash, and sliced sausage. Drizzle with olive oil and sprinkle with Cajun seasoning, salt, and pepper. Toss until evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until veggies are tender and caramelized.
  6. Transfer to plates while hot, garnishing with fresh thyme before serving.
