Description

  • 4 medium bell peppers (mixed colors: red, yellow, green)
  • 1 lb ground chicken
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Slice the tops off the bell peppers and remove seeds, creating little cups.
  3. In a large skillet over medium heat, sauté the diced onion until translucent (about 5 minutes). Add minced garlic and ground chicken; cook until browned (about 7 minutes).
  4. Stir in cooked rice, chili powder, cumin, salt, and pepper into the chicken mixture until well combined.
  5. Spoon the filling into each bell pepper until they overflow slightly. Place them upright in the prepared baking dish.
  6. Cover with aluminum foil and bake for about 25-30 minutes. Remove foil for the last 5 minutes to achieve a golden finish.
