- 4 medium bell peppers (mixed colors: red, yellow, green)
- 1 lb ground chicken
- 1 cup cooked rice (white or brown)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- Slice the tops off the bell peppers and remove seeds, creating little cups.
- In a large skillet over medium heat, sauté the diced onion until translucent (about 5 minutes). Add minced garlic and ground chicken; cook until browned (about 7 minutes).
- Stir in cooked rice, chili powder, cumin, salt, and pepper into the chicken mixture until well combined.
- Spoon the filling into each bell pepper until they overflow slightly. Place them upright in the prepared baking dish.
- Cover with aluminum foil and bake for about 25-30 minutes. Remove foil for the last 5 minutes to achieve a golden finish.
