Ingredients

  • 2 tablespoons taco seasoning
  • 1 cup low-sodium beef broth
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • Fresh tortillas (flour or corn)
  • Fresh cilantro
  • Diced tomatoes
  • Sliced avocado
  • Lime wedges

Instructions

  1. Gather all ingredients on your counter. Dice the onion and mince the garlic.
  2. Turn on your Instant Pot and select the sauté function. Add a drizzle of oil. Season both sides of the flank steak with taco seasoning. Sear for about 3 minutes per side until browned.
  3. Remove the steak and set aside. Add diced onion and minced garlic to the pot, sautéing for about 2 minutes until fragrant.
  4. Return the flank steak to the pot along with beef broth. Lock the lid and cook at high pressure for about 45 minutes.
  5. Once cooking is complete, carefully perform a quick release by turning the valve to venting position. Remove the lid when safe and shred the flank steak with two forks in its juices.
  6. Warm tortillas briefly on a skillet or in foil packets. Fill each tortilla with shredded flank steak and top with fresh cilantro, diced tomatoes, avocado slices, and lime juice.
