Description

This Garlic Butter Shrimp with Orzo and Spinach is a quick, vibrant dish that perfectly combines buttery garlic flavors with succulent shrimp, fresh spinach, and tender orzo for a delightful meal.

Ingredients

Scale
  • 1 pound shrimp (peeled and deveined)
  • 1 cup orzo pasta
  • 4 cups fresh baby spinach
  • 4 cloves garlic (minced)
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to boil. Add orzo and cook according to package instructions until al dente. Drain and reserve some pasta water.
  2. In a large skillet over medium heat, melt butter. Once melted, add minced garlic and sauté for about one minute until fragrant.
  3. Add shrimp to the skillet, season with salt and pepper, and cook for about three minutes per side or until pink and opaque. Remove from skillet once cooked.
  4. In the same skillet, mix in cooked orzo and fresh spinach, stirring gently until well combined and the spinach wilts.
  5. Squeeze fresh lemon juice over the mixture and toss gently. If the dish looks dry, add reserved pasta water as needed.
  6. Plate your Garlic Butter Shrimp with Orzo and Spinach. Garnish with extra lemon slices or fresh herbs if desired.
