Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined.
- Press the mixture evenly into the bottom of a springform pan.
- Bake for about 10 minutes or until golden brown. Let cool.
- In a large bowl, beat softened cream cheese until smooth.
- Add sour cream and mix until well combined.
- Gradually add eggs, one at a time, blending well after each addition.
- Pour in eggnog, vanilla extract, nutmeg, and cinnamon; blend thoroughly.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 60-70 minutes or until set but slightly jiggly in the center.
- Turn off the oven and crack open the door slightly; let cool for about an hour inside.
- Transfer to room temperature to cool completely before refrigerating for at least four hours or overnight.
