Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans with non-stick spray and dust with flour.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sugar until well combined.
- In another bowl, mix eggs, buttermilk, melted butter, and vanilla extract until smooth. Gradually add this mixture to dry ingredients and stir until just combined.
- Divide the batter evenly between prepared pans. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let cakes cool in pans for about ten minutes before transferring to wire racks. Allow cakes to cool completely.
- While cakes cool, heat heavy cream until just simmering. Pour over dark chocolate chips in a bowl; stir until melted and glossy.
- In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form.
- Layer one chocolate cake on a plate. Spread frosting generously on top followed by some ganache. Place the second layer on top and repeat. Drizzle additional ganache over everything for an impressive finish.
