  • 1 lb beef sirloin, cut into strips
  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tbsp Dijon mustard

Instructions

  1. In a large skillet over medium-high heat, add a splash of oil. Once hot, add the beef strips and cook until browned (about 3 minutes). Remove from skillet and set aside.
  2. In the same skillet, add chopped onion and sauté until translucent (about 3 minutes). Stir in minced garlic and sliced mushrooms; cook until mushrooms soften and release their juices.
  3. Pour in beef broth and bring to a gentle simmer. Stir in Dijon mustard and let bubble for about 5 minutes until slightly thickened.
  4. Reduce heat to low and stir in sour cream until fully incorporated. Return cooked beef to the skillet and mix well to coat with sauce. Warm through for another minute.
  5. Serve hot over egg noodles or rice, garnished with fresh parsley if desired.
