- 1 lb beef sirloin, cut into strips
- 8 oz fresh button or cremini mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup full-fat sour cream
- 1 tbsp Dijon mustard
Instructions
- In a large skillet over medium-high heat, add a splash of oil. Once hot, add the beef strips and cook until browned (about 3 minutes). Remove from skillet and set aside.
- In the same skillet, add chopped onion and sauté until translucent (about 3 minutes). Stir in minced garlic and sliced mushrooms; cook until mushrooms soften and release their juices.
- Pour in beef broth and bring to a gentle simmer. Stir in Dijon mustard and let bubble for about 5 minutes until slightly thickened.
- Reduce heat to low and stir in sour cream until fully incorporated. Return cooked beef to the skillet and mix well to coat with sauce. Warm through for another minute.
- Serve hot over egg noodles or rice, garnished with fresh parsley if desired.
