Description

Savor the delightful combination of tender chicken, creamy brie, and sweet apples in this easy-to-make stuffed chicken recipe that’s perfect for any occasion.

Ingredients

Scale
  • 3 boneless, skinless chicken breasts
  • 1 cup ripe brie cheese, diced
  • 1 cup tart apples (such as Granny Smith), diced
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly coat a baking dish with nonstick cooking spray.
  2. In a bowl, combine diced apples, chopped spinach, minced garlic, salt, and pepper. Add diced brie cheese and mix gently until well combined.
  3. Create a pocket in each chicken breast by slicing horizontally but not all the way through. Generously stuff each pocket with the apple-brie filling.
  4. Heat olive oil in a large skillet over medium heat. Once hot, place the stuffed chicken breasts in the skillet and sear each side for about five minutes until golden brown.
  5. Transfer seared chicken breasts to the prepared baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for five minutes before serving. Slice into the chicken to reveal the melty brie and sweet apple filling.
