- 3 boneless, skinless chicken breasts
- 1 cup ripe brie cheese, diced
- 1 cup tart apples (such as Granny Smith), diced
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced

- 2 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 400°F (200°C). Lightly coat a baking dish with nonstick cooking spray.
- In a bowl, combine diced apples, chopped spinach, minced garlic, salt, and pepper. Add diced brie cheese and mix gently until well combined.
- Create a pocket in each chicken breast by slicing horizontally but not all the way through. Generously stuff each pocket with the apple-brie filling.
