- 2 large sweet onions, chopped
- 6 cloves garlic, minced
- 2 cups low-sodium beef broth

Instructions
- Preheat Your Oven: Preheat your oven to 325°F (163°C).
- Prepare the Ribs: Season the beef short ribs generously with salt and pepper. Pat them dry with paper towels.
- Sear the Ribs: In a large oven-safe pot or Dutch oven over medium-high heat, add a splash of oil. When hot, sear each rib until browned on all sides.
- Add Aromatics: Remove the ribs and set aside. In the same pot, sauté chopped onions and minced garlic until softened and fragrant, about five minutes.
- Deglaze the Pot: Pour in beef broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle boil.
- Braise: Add thyme and return the ribs to the pot. Cover with a lid and transfer to the preheated oven. Allow to braise for about 2.5 hours or until tender.
- Serve: Once done, transfer ribs onto plates and drizzle with sauce before serving alongside mashed potatoes or roasted vegetables.
