Description

Brown Butter Sage Gnocchi with Roasted Squash is a comforting dish that marries nutty flavors with sweet roasted squash, perfect for chilly evenings or festive gatherings.

Ingredients

Scale
  • 1 package (16 oz) high-quality gnocchi
  • 2 cups butternut squash, peeled and cubed
  • 4 tbsp unsalted butter
  • 10 fresh sage leaves
  • 1/2 cup freshly grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Squash: In a bowl, toss the cubed butternut squash with olive oil, salt, and pepper. Spread evenly on the prepared baking sheet.
  3. Roast the Squash: Roast the squash for 25-30 minutes until fork-tender and caramelized at the edges.
  4. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface (about 2 minutes). Drain using a slotted spoon.
  5. Brown the Butter: In a large skillet over medium heat, melt unsalted butter. Add fresh sage leaves and cook until the butter turns golden brown and fragrant (about 5 minutes).
  6. Combine Everything: Add cooked gnocchi and roasted squash to the skillet with brown butter sage sauce. Toss gently until well-coated. Sprinkle freshly grated Parmesan on top before serving.
