Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz lo mein noodles (or spaghetti as a substitute)
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snow peas
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 2 tbsp oyster sauce
- 2 cloves garlic, minced
Instructions
- Bring a large pot of water to boil. Add lo mein noodles and cook according to package instructions until al dente. Drain and toss with a splash of sesame oil to prevent sticking.
- While the noodles are cooking, slice boneless chicken breasts into thin strips. Season lightly with salt and pepper.
- In a large skillet or wok over medium-high heat, add a tablespoon of oil. Once hot, add chicken and sauté until golden brown and cooked through (about 5 minutes).
- Add bell peppers, carrots, snow peas, and minced garlic to the skillet. Stir-fry for about 3 minutes until vegetables soften but remain crunchy.
- In a small bowl, whisk together soy sauce, oyster sauce, and any additional spices you prefer (like red pepper flakes). Pour this over chicken and vegetables.
- Add cooked noodles to skillet and gently toss all ingredients until well combined and heated through (about 2 minutes). Serve hot with a drizzle of extra sauce if desired!
