  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika (sweet or smoked)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 3 tbsp tahini paste

Instructions

  1. In a bowl, mix minced garlic, ground cumin, ground coriander, paprika, lemon juice, olive oil, salt, and pepper to create a marinade.
  2. Place chicken thighs in a resealable bag or bowl. Pour marinade over chicken, ensuring it's fully coated. Seal or cover and refrigerate for at least one hour (or overnight for maximum flavor).
  3. Preheat grill to medium-high heat (about 400°F/200°C).
  4. Remove chicken from marinade and grill for about 6-8 minutes per side until cooked through (internal temperature of at least 165°F/75°C) and golden brown.
  5. Let the chicken rest for five minutes before slicing it into thin strips.
  6. In a small bowl, combine plain yogurt and tahini paste. Mix until smooth.
