- 2 crisp red apples (e.g., Honeycrisp or Fuji)
- 1 cup chopped celery
- 1 cup seedless grapes, halved
- 1/2 cup toasted walnuts
- 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
- 1 tbsp Dijon mustard
- 2 tbsp freshly squeezed lemon juice
Instructions
- Boil or poach chicken breasts for about 15-20 minutes until fully cooked. Allow to cool before shredding or dicing into bite-sized pieces.
- While chicken cools, chop apples and celery into small chunks. Halve the grapes and roughly chop walnuts if unchopped.
- In a mixing bowl, combine mayonnaise, Dijon mustard, and lemon juice. Stir until smooth.
- In a large bowl, mix cooked chicken, apples, celery, grapes, and walnuts. Add dressing and toss until well coated.
- Cover with plastic wrap or transfer to an airtight container. Chill in the fridge for at least one hour to enhance flavors.
