Description

Experience a delightful blend of tender chicken, crunchy apples, and creamy dressing in this vibrant Chicken Waldorf Salad. Perfect for lunch or as a light dinner!

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 crisp red apples (e.g., Honeycrisp or Fuji)
  • 1 cup chopped celery
  • 1 cup seedless grapes, halved
  • 1/2 cup toasted walnuts
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tbsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Boil or poach chicken breasts for about 15-20 minutes until fully cooked. Allow to cool before shredding or dicing into bite-sized pieces.
  2. While chicken cools, chop apples and celery into small chunks. Halve the grapes and roughly chop walnuts if unchopped.
  3. In a mixing bowl, combine mayonnaise, Dijon mustard, and lemon juice. Stir until smooth.
  4. In a large bowl, mix cooked chicken, apples, celery, grapes, and walnuts. Add dressing and toss until well coated.
  5. Cover with plastic wrap or transfer to an airtight container. Chill in the fridge for at least one hour to enhance flavors.
  6. Serve chilled as a refreshing main course or side dish!
