- 2–3 pounds boneless pork loin roast
- 4 firm apples (e.g., Granny Smith or Honeycrisp), cored and sliced
- 8 fresh sage leaves, chopped
- 4 garlic cloves, minced
- 1/4 cup brown sugar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together olive oil, minced garlic, salt, pepper, and brown sugar until well combined.
- Rub the marinade generously all over the pork loin. Let it sit at room temperature for about 30 minutes.
- Core and slice your apples into wedges. Toss them with chopped sage leaves and set aside.
- Place the marinated pork in a roasting pan and scatter apple slices around it. Roast in the preheated oven for about one hour or until the internal temperature reaches at least 145°F (63°C).
- Allow the roast to rest for at least 10 minutes before slicing to retain its juices.
