Delight in the cozy flavors of this Cinnamon Apple Roast with Sage, where tender meat meets sweet apples and aromatic herbs for a heartwarming meal.

Ingredients

Scale
  • 23 pounds boneless pork loin roast
  • 4 firm apples (e.g., Granny Smith or Honeycrisp), cored and sliced
  • 8 fresh sage leaves, chopped
  • 4 garlic cloves, minced
  • 1/4 cup brown sugar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together olive oil, minced garlic, salt, pepper, and brown sugar until well combined.
  3. Rub the marinade generously all over the pork loin. Let it sit at room temperature for about 30 minutes.
  4. Core and slice your apples into wedges. Toss them with chopped sage leaves and set aside.
  5. Place the marinated pork in a roasting pan and scatter apple slices around it. Roast in the preheated oven for about one hour or until the internal temperature reaches at least 145°F (63°C).
  6. Allow the roast to rest for at least 10 minutes before slicing to retain its juices.
