Description

Ingredients

  • 2 cups fresh cranberries
  • 3/4 cup granulated sugar
  • 1 cup heavy cream (cold)
  • 1 tsp pure vanilla extract
  • 1 tbsp unflavored gelatin powder
  • 2 tbsp cold water

Instructions

  1. Rinse fresh cranberries under cold water. In a saucepan, combine cranberries and sugar over medium heat. Cook for about 10 minutes until the cranberries burst and soften.
  2. In a separate bowl, mix gelatin powder with 2 tbsp of cold water. Let it sit for about 5 minutes to bloom, then gently warm until dissolved.
  3. In another mixing bowl, pour in chilled heavy cream and add vanilla extract. Whip with an electric mixer until soft peaks form, approximately 3-4 minutes.
  4. Gently fold the cooled cranberry mixture into the whipped cream until well combined but still fluffy.
  5. Slowly incorporate the gelatin mixture into the mousse.
  6. Spoon the mousse into serving cups or bowls and refrigerate for at least two hours or overnight.
  7. Garnish with extra whipped cream or fresh cranberries before serving to enhance presentation.
