Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- 2 cups fresh baby spinach
- 1 cup sliced cremini or button mushrooms
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove from skillet.
- Sauté the Vegetables: In the same skillet, add more olive oil if necessary. Toss in minced garlic and sauté until fragrant (about 1 minute). Add sliced mushrooms and cook until tender and golden brown.
- Add Spinach: Stir in fresh spinach and cook until wilted (about 2 minutes).
- Create the Sauce: Pour in heavy cream and chicken broth; bring to a simmer over low heat. Stir in grated Parmesan cheese until melted and smooth.
- Combine Chicken: Return seared chicken breasts to the skillet, spooning sauce over them. Allow to simmer together for about 5 more minutes.
- Serve It Up: Plate the chicken with sauce drizzled generously on top. Garnish with additional Parmesan cheese if desired.
