- 3–4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 4 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing (store-bought or homemade)
- 4 brioche buns
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat chicken breasts dry with paper towels.
- Set up a dredging station: one bowl with flour mixed with salt and pepper, another with beaten eggs, and a third with panko breadcrumbs mixed with grated Parmesan.
- Coat each chicken breast in the flour mixture, then dip into the egg wash, and finally roll in breadcrumbs until fully covered.
- Place coated chicken on the baking sheet and bake for 20-25 minutes until golden brown (internal temperature should reach at least 165°F or 75°C).
- Cut open brioche buns and spread Caesar dressing on each side.
- Layer with chopped romaine lettuce and place crispy chicken on top.
- Drizzle extra Caesar dressing if desired and sprinkle additional Parmesan cheese before closing sandwiches.
