Description

Indulge in a vibrant salad featuring roasted Brussels sprouts, creamy Caesar dressing, and crunchy breadcrumbs. This delightful dish is perfect for any gathering or cozy night in!

Ingredients

Scale
  • 1 pound fresh Brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim the ends from the Brussels sprouts and slice them in half lengthwise. In a bowl, toss the sprouts with olive oil, minced garlic, salt, and pepper until well coated.
  3. Spread the coated Brussels sprouts on the prepared baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes until golden brown and crispy.
  4. While the sprouts are roasting, heat a tablespoon of olive oil in a pan over medium heat. Add panko breadcrumbs and toast them until golden brown (about 5 minutes), stirring frequently.
  5. Once roasted, transfer the Brussels sprouts to a large bowl. Drizzle with Caesar dressing and toss well until evenly coated.
  6. Sprinkle toasted breadcrumbs and grated Parmesan on top before serving. Distribute onto plates and enjoy!
