- 2 cups corn kernels (fresh or frozen)
- 8 oz cream cheese (softened)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp chili powder (adjust to taste)
- 1/4 cup fresh cilantro (chopped, optional)
- 1/2 cup cheese (crumbled Cotija or Feta)
Instructions
- Gather all your ingredients. If using fresh corn, cut the kernels from about four ears.
- In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth.
- Fold in the corn kernels along with lime juice, chili powder, chopped cilantro (if using), and crumbled cheese until well combined.
- Taste and adjust with more lime juice or chili powder as needed.
- Transfer the mixture into an oven-safe dish. Bake at 350°F (175°C) for about 20 minutes until bubbly and golden.
- Remove from oven and top with extra cheese or cilantro if desired. Serve warm with tortilla chips or veggies.
