Description

Elote Dip: A creamy, zesty blend of sweet corn and spices that will elevate your snack game at any gathering.


Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder (adjust to taste)
  • 1/4 cup fresh cilantro (chopped, optional)
  • 1/2 cup cheese (crumbled Cotija or Feta)

Instructions

  1. Gather all your ingredients. If using fresh corn, cut the kernels from about four ears.
  2. In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth.
  3. Fold in the corn kernels along with lime juice, chili powder, chopped cilantro (if using), and crumbled cheese until well combined.
  4. Taste and adjust with more lime juice or chili powder as needed.
  5. Transfer the mixture into an oven-safe dish. Bake at 350°F (175°C) for about 20 minutes until bubbly and golden.
  6. Remove from oven and top with extra cheese or cilantro if desired. Serve warm with tortilla chips or veggies.
