- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1/4 cup high-quality balsamic vinegar
- 2 tbsp honey
- 2 cups mixed seasonal vegetables (bell peppers, zucchini, carrots)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and chop vegetables into bite-sized pieces.
- Sprinkle salt and pepper on both sides of the chicken breasts.
- Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken for about 5 minutes on each side until golden brown.
- Stir in minced garlic along with the mixed vegetables. Cook for about 3 minutes until they begin to soften.
- Whisk together balsamic vinegar and honey in a small bowl, then pour over the chicken and veggies in the skillet.
- Cover the skillet and let everything simmer on low heat for about 10 minutes until the chicken is cooked through (internal temperature should reach 165°F).
