Warm and comforting, this Fall Harvest Balsamic Chicken Skillet features juicy chicken and vibrant seasonal vegetables drizzled with a sweet-tangy balsamic glaze.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup high-quality balsamic vinegar
  • 2 tbsp honey
  • 2 cups mixed seasonal vegetables (bell peppers, zucchini, carrots)

  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop vegetables into bite-sized pieces.

  3. Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken for about 5 minutes on each side until golden brown.
  4. Stir in minced garlic along with the mixed vegetables. Cook for about 3 minutes until they begin to soften.
  5. Whisk together balsamic vinegar and honey in a small bowl, then pour over the chicken and veggies in the skillet.
  6. Cover the skillet and let everything simmer on low heat for about 10 minutes until the chicken is cooked through (internal temperature should reach 165°F).
