- 1 pound large shrimp (16–20 count), peeled and deveined
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 2 tablespoons fresh lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 teaspoon chili flakes (optional)
- Colorful veggies (bell peppers, zucchini, etc.), cut into chunks
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with aluminum foil.
- In a small saucepan over medium heat, melt the unsalted butter. Add minced garlic and sauté until fragrant, about one minute. Remove from heat and stir in fresh lemon juice, salt, and pepper.
- Place the peeled and deveined shrimp in a bowl. Pour half of the garlic butter mixture over them and toss until well coated. Allow them to marinate while you prep your skewers.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread marinated shrimp onto skewers alternately with colorful veggies.
- Arrange assembled skewers on the lined baking sheet. Drizzle remaining garlic butter generously over them before placing in the preheated oven. Roast for about 10-12 minutes until shrimp are opaque and cooked through.
- Once done, remove from oven and let rest briefly before serving. Transfer to plates or a platter, drizzling any leftover garlic butter sauce over the top.
