Ingredients

  • 1 teaspoon baking soda

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt until well combined.
  3. In another bowl, cream the softened butter and brown sugar together until light and fluffy (about three minutes).
  4. Add molasses and the egg to the butter-sugar mixture; beat until fully incorporated.
  5. Gradually add the dry ingredients into the wet mixture using low speed until just combined.
  6. Roll out the dough on a floured surface to about a quarter-inch thick. Cut out festive shapes using cookie cutters.
  7. Place cookies on ungreased baking sheets with space between each cookie.
  8. Bake for 8-10 minutes or until firm at the edges but still slightly soft in the center. Cool completely on wire racks before decorating.
