- 1 cup heavy cream (cold)
- 2 tbsp instant coffee
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 cup molasses (unsulfured)
- 1/4 cup granulated sugar
- 2 tsp gelatin powder
Instructions
- Measure all ingredients, ensuring the heavy cream is cold.
- In a small bowl, combine gelatin with 2 tbsp cold water and let it bloom for about five minutes.
- In a saucepan over medium heat, mix molasses, instant coffee, ground ginger, cinnamon, and sugar until well combined and sugar dissolves.
- Remove from heat and stir in bloomed gelatin until completely dissolved. Allow to cool slightly.
- In a large bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the cooled coffee-spice mixture into the whipped cream until fully combined.
- Transfer mousse into silicone dome molds or small cups, smoothing the tops with a spatula.
- Chill in the refrigerator for at least four hours or overnight before serving.
