Description

Ingredients

  • 1 cup toasted hazelnuts, finely ground
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 egg yolks
  • 1 cup high-quality chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add egg yolks one at a time, mixing well after each addition.
  3. Gradually incorporate all-purpose flour and ground hazelnuts until fully combined.
  4. Scoop about a tablespoon of dough and roll it into balls. Place on a lined baking sheet, spacing them two inches apart.
  5. Press your thumb into each ball to create an indentation.
  6. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on the baking sheet before transferring to wire racks.
  7. While cookies cool, heat heavy cream over low heat until warm (not boiling).
  8. Add chopped chocolate to the warm cream and stir until melted and smooth.
  9. Once cookies are cool, drizzle or spoon ganache into each thumbprint.
