- 1 cup toasted hazelnuts, finely ground
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 egg yolks
- 1 cup high-quality chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add egg yolks one at a time, mixing well after each addition.
- Gradually incorporate all-purpose flour and ground hazelnuts until fully combined.
- Scoop about a tablespoon of dough and roll it into balls. Place on a lined baking sheet, spacing them two inches apart.
- Press your thumb into each ball to create an indentation.
- Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on the baking sheet before transferring to wire racks.
- While cookies cool, heat heavy cream over low heat until warm (not boiling).
- Add chopped chocolate to the warm cream and stir until melted and smooth.
- Once cookies are cool, drizzle or spoon ganache into each thumbprint.
