  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a large skillet over medium-high heat, add olive oil. Once hot, sear the chicken for about five minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and cook for about one minute until fragrant.
  5. Stir in heavy cream and chicken broth; simmer for three minutes.
  6. Add chopped thyme and rosemary to the sauce, stirring to combine.
  7. Return seared chicken to the skillet, spooning sauce over it.
  8. Transfer the skillet to the preheated oven and bake for about twenty-five minutes or until chicken is cooked through (165°F or 75°C). Serve with drizzled sauce.
