  • 1.5 lbs flank steak
  • 1 medium sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 cup beef broth
  • 8 small tortillas (flour or corn)
  • 1/4 cup fresh cilantro, chopped
  • 2 lime wedges
  • 1/2 cup sour cream

Instructions

  1. Prepare Your Instant Pot: Set the Instant Pot to 'Sauté' mode and heat a splash of oil. Add the sliced onion and sauté until softened.
  2. Season the Flank Steak: Generously season both sides of the flank steak with chili powder, cumin, salt, and pepper.
  3. Sear the Meat: Remove the onions from the pot and sear the seasoned flank steak for about three minutes on each side until browned.
  4. Add Garlic and Broth: Stir in minced garlic and scrape up any browned bits from the bottom of the pot. Pour in beef broth.
  5. Pressure Cook: Seal the lid and set to 'Manual' on high pressure for 12 minutes. Allow a natural release for five minutes before quickly releasing any remaining steam.
  6. Shred and Assemble: Carefully remove the steak and shred it with two forks. Return it to soak up juices before serving on warm tortillas topped with cilantro, a squeeze of lime, and sour cream.
