- 1.5 lbs flank steak
- 1 medium sweet onion, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 cup beef broth
- 8 small tortillas (flour or corn)
- 1/4 cup fresh cilantro, chopped
- 2 lime wedges
- 1/2 cup sour cream
Instructions
- Prepare Your Instant Pot: Set the Instant Pot to 'Sauté' mode and heat a splash of oil. Add the sliced onion and sauté until softened.
- Season the Flank Steak: Generously season both sides of the flank steak with chili powder, cumin, salt, and pepper.
- Sear the Meat: Remove the onions from the pot and sear the seasoned flank steak for about three minutes on each side until browned.
- Add Garlic and Broth: Stir in minced garlic and scrape up any browned bits from the bottom of the pot. Pour in beef broth.
- Pressure Cook: Seal the lid and set to 'Manual' on high pressure for 12 minutes. Allow a natural release for five minutes before quickly releasing any remaining steam.
- Shred and Assemble: Carefully remove the steak and shred it with two forks. Return it to soak up juices before serving on warm tortillas topped with cilantro, a squeeze of lime, and sour cream.
