Description

Savor the flavors of this Instant Pot Shrimp Scampi, featuring tender shrimp in a rich garlic butter sauce served over linguine, ready in just 15 minutes.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 8 oz linguine pasta (whole wheat or regular)
  • 1 cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the Ingredients
  2. Gather all ingredients to streamline your cooking process.
  3. Sauté Aromatics
  4. Set the Instant Pot to sauté mode. Melt butter until bubbling, then add minced garlic. Sauté for about one minute until fragrant.
  5. Add Liquid Ingredients
  6. Pour in chicken broth and scrape up any bits stuck to the bottom of the pot.
  7. Cook the Pasta
  8. Add linguine pasta directly into the pot, ensuring it's submerged in liquid. Close the lid and set to manual high pressure for three minutes.
  9. Release Pressure & Add Shrimp
  10. Once cooking time is up, quickly release pressure. Stir in shrimp and lemon juice; seal again for an additional minute to cook the shrimp perfectly.
  11. Finish & Serve
  12. Mix everything thoroughly and sprinkle with grated Parmesan cheese before serving.
