- 1 lb lean ground beef
- 4 medium zucchinis (sliced into 1/4-inch rounds)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- Slice the zucchinis into thin rounds and set aside.
- In a large skillet over medium heat, brown the ground beef with diced onion and minced garlic until fully cooked. Drain excess fat if necessary.
- Stir in Italian seasoning, salt, and pepper into the beef mixture. Simmer for about five minutes.
- In the prepared baking dish, layer half of the zucchini slices, followed by half of the meat mixture, topped with cheese. Repeat layers until all ingredients are used.
- Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
- Let it cool slightly before serving. Drizzle with olive oil or sprinkle fresh herbs as a finishing touch.
