  • 4 medium zucchinis (sliced into 1/4-inch rounds)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Slice the zucchinis into thin rounds and set aside.
  3. In a large skillet over medium heat, brown the ground beef with diced onion and minced garlic until fully cooked. Drain excess fat if necessary.
  4. Stir in Italian seasoning, salt, and pepper into the beef mixture. Simmer for about five minutes.
  5. In the prepared baking dish, layer half of the zucchini slices, followed by half of the meat mixture, topped with cheese. Repeat layers until all ingredients are used.
  6. Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
