Description

Indulge in the warmth of Marry Me Chicken Soup, a cozy blend of tender chicken, fresh vegetables, and aromatic herbs that promises to delight your taste buds.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 large carrots, sliced thin
  • 3 celery stalks, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or fresh)
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Chop the carrots and celery into bite-sized pieces. Mince the garlic finely.
  2. In a large pot over medium heat, add a splash of olive oil. Once hot, add the minced garlic, carrots, and celery. Sauté for about 5 minutes until fragrant and softened.
  3. Incorporate the boneless chicken breasts into the pot. Season with salt and pepper. Sear for approximately 3-4 minutes per side until golden brown.
  4. Add in the chicken broth along with thyme and bay leaves. Bring to a gentle boil before reducing heat to let it simmer for about 25-30 minutes.
  5. After cooking through, remove chicken breasts from the pot and shred them using two forks. Return shredded chicken back into the pot and stir well.
  6. Taste your soup and adjust seasoning as necessary. Serve hot with crusty bread or over rice.
