- 2 bell peppers (1 red, 1 yellow), chopped
- 1 medium zucchini, chopped
- 1 cup cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine chopped bell peppers, zucchini, and halved cherry tomatoes.
- Drizzle olive oil over the vegetables. Sprinkle with Italian seasoning, salt, and pepper. Toss until well coated.
- Spread the seasoned veggies onto a baking sheet in a single layer. Roast for about 20 minutes or until they begin to caramelize.
- Once the vegetables are roasted, add the gnocchi to the same baking sheet and gently toss everything together.
