Instructions

- Cut in chilled butter until the mixture resembles coarse crumbs.
- Stir in cold water, one tablespoon at a time, until dough forms.
- Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
- For the Filling: Preheat your oven to 375°F (190°C).
- In a large bowl, combine sliced pears with sugar, lemon juice, and cinnamon. Let sit for 15 minutes.
- Assembling the Pie: Roll out half of the chilled dough on a floured surface to fit your pie dish.
- Place the rolled crust into the pie dish and fill it with the prepared pear mixture.
- Roll out the second half of the dough for the top crust; place it over the filling and cut slits for steam vents.
- Seal edges by crimping with fingers or a fork.
