Ingredients

Scale
  • 1 lb ground beef
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup pure pomegranate juice
  • 2 tbsp soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, panko breadcrumbs, egg, parsley, garlic powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into small balls (about 1 inch in diameter) and place them on the prepared baking sheet with space between each one.
  4. Bake for about 20 minutes or until cooked through and golden brown.
  5. While meatballs are baking, whisk together pomegranate juice, soy sauce, honey, and a pinch of salt in a saucepan over medium heat. Let it simmer until slightly thickened (about 5 minutes).
