Instructions
- Chop the chicken or beef into bite-sized pieces to ensure even cooking.
- In a large pot over medium heat, add oil and sauté the diced onion until translucent (about five minutes). Stir in minced garlic and cook until fragrant (around one minute).
- Add the cubed chicken or beef to the pot. Season with salt, pepper, and cumin. Sear the meat until browned on all sides (approximately eight minutes).
- Stir in the green chilies followed by the chicken broth. Bring the mixture to a simmer and let it bubble gently for about thirty minutes.
- Remove from heat and stir in fresh lime juice for a zesty finish.
