- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
- Press the mixture firmly into the bottom of a greased baking pan. Bake for about 10 minutes until lightly golden and set aside to cool.
- In another bowl, beat softened cream cheese and sugar until smooth.
- Add pumpkin puree, eggs, pumpkin pie spice, and vanilla extract. Mix until well combined and creamy.
- Pour the filling over the cooled crust, smoothing out the top with a spatula.
- Bake in the preheated oven for approximately 30-35 minutes or until the center is set but slightly jiggly.
- Allow to cool at room temperature before transferring to the fridge. Chill for at least two hours before serving.
