- 3–4 boneless, skinless chicken breasts
- 1 cup fresh bell peppers (mixed colors)
- 1 cup broccoli florets
- 1 cup carrots (thinly sliced)
- 2 cloves fresh garlic
- 1/4 cup low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
Instructions
- Slice chicken breasts into thin strips against the grain. Chop all vegetables and mince garlic.
- In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add chicken strips and stir-fry until golden brown (about five minutes).
- Add bell peppers, broccoli, and carrot slices to the skillet, cooking until tender-crisp (around three minutes).
- In a small bowl, whisk together soy sauce, oyster sauce, minced garlic, and sesame oil. Pour over the stir-fried chicken and vegetables.
- Add cooked noodles of your choice to the skillet. Toss everything together until well combined and heated through (about two minutes).
- Transfer to plates or bowls and garnish with sesame seeds or chopped green onions if desired.
