- 1 cup quick-cooking grits
- 1 cup whole milk
- 1 cup sharp cheddar cheese, shredded
- 2 tbsp butter (plus more for cooking shrimp)
- 1 lb shrimp, peeled and deveined
- 3 green onions, chopped
- 2 tsp Old Bay seasoning
- 1 cup Panko breadcrumbs
- Salt to taste
Instructions
- In a medium saucepan, bring water to a boil. Add salt to taste and stir in the grits. Reduce heat to low and cook according to package instructions until thickened, about five minutes.
- Once thickened, stir in milk and butter until smooth. Mix in shredded cheddar cheese until fully melted. Set aside.
- In a skillet over medium heat, melt some butter. Add shrimp and Old Bay seasoning; cook until pink and cooked through, about three minutes per side.
- Fold cooked shrimp into the cheesy grits mixture along with chopped green onions.
- Allow the mixture to cool slightly before scooping portions onto a lined baking sheet. Form small balls or patties, approximately two inches wide.
- Preheat your oven to 375°F (190°C). Roll each bite in Panko breadcrumbs for extra crunch before placing them back on the baking sheet.
- Bake for about twenty minutes or until golden brown. Serve hot with your favorite dipping sauce!
