  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 2 medium yellow onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • Salt & Pepper to taste
  • 2 tbsp fresh rosemary, chopped (or thyme)

Instructions

  1. Preheat Your Oven: Preheat your oven to 325°F (165°C).
  2. Season the Meat: Generously season the boneless chuck roast with salt and pepper on all sides.
  3. Sear the Roast: In a large oven-safe pot or Dutch oven, heat some oil over medium-high heat. Sear the roast until browned on all sides, about 3–4 minutes per side.
  4. Add Aromatics: Remove the roast and add sliced onions and minced garlic to the pot. Sauté until soft and fragrant, about 5 minutes.
  5. Create The Glaze: Stir in cranberry sauce and balsamic vinegar into the onion-garlic mixture until well combined. Pour in beef broth and add chopped rosemary.
  6. Braise the Roast: Return the seared roast to the pot, cover tightly with a lid or aluminum foil, and braise in the preheated oven for about 3–4 hours until fork-tender.
  7. Serve: Slice the beef and drizzle generously with the luscious glaze before serving.
