- 2 medium onions, chopped finely
- 4 cloves garlic, minced

- Salt and pepper to taste
Instructions
- Gather all ingredients. Chop the onions and carrots, and mince the garlic.
- In a large skillet over medium-high heat, add a splash of olive oil. Sear the lamb shanks until golden brown on all sides (about three minutes per side).
- In the same skillet, add the chopped onions and carrots. Sauté until soft (about five minutes), then add minced garlic for another minute until fragrant.
- Transfer everything into a slow cooker or Dutch oven along with your lamb shanks. Pour in beef or chicken broth, toss in fresh herbs, then season with salt and pepper. Cover and cook on low for six hours or until tender.
- Once cooked through, carefully remove shanks from the pot. Serve over creamy mashed potatoes or polenta, drizzling with sauce for an elegant finish.
