- 3 to 4 pounds chuck roast
- Salt and pepper, to taste
- 2 tablespoons smoked paprika
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- Trim excess fat from the chuck roast and cut it into manageable pieces. Season generously with salt and pepper.
- In a skillet over medium heat, add a drizzle of oil. Sauté the sliced onions and minced garlic until soft and fragrant, about 5 minutes.
- In a bowl, combine ketchup, smoked paprika, brown sugar, and Worcestershire sauce. Mix well to blend.
- Place seasoned beef chunks in the slow cooker. Pour the sautéed onion-garlic mixture over them followed by the sauce blend. Stir gently to coat.
- Cover and cook on low for about 8 hours or high for 4 hours until fork-tender.
- Remove beef from the slow cooker and shred using two forks. Serve on toasted buns with coleslaw or enjoy as is.
